When it comes to cuisine, there are certainly a few things that will always be true: that pasta should be served al dente, red wine pairs best with red meats, and a perfectly cooked steak will forever be among the greatest of life’s joys. The demand for good steak among Hong Kong’s famously discerning dining public is always high, but gone are the days when a satisfacto­ry meal was determined by the cut of one’s meat alone – setting is becoming just as important to the overall meal experience.

Perched on the 21st floor of The ONE shopping mall on Tsim Sha Tsui district’s famed Nathan Road, Wooloomool­oo Prime offers stunning views of Victoria Harbour that act as the perfect accompanim­ent to the top-quality cuts it serves.

Certainly, Wooloomool­oo Group's premium brand lives up to its name with the produce it brings to diners, offering a prime selection of beef from around the world. The brand houses Kiwami wagyu beef from Australian producer Stockyard; and the award-winning organic free range beef from Rhug Estate Organic Farm in North Wales – which offers two worldexclu­sive cuts, bone-in sirloin and bone-in rib eye, to the restaurant. Notably, the beef from Rhug Estate is dry-aged for 45 days rather than the standard 35 days, giving the cut its distinctiv­e characteri­stics.

Other signature steakhouse staples include a handcut recipe for steak tartare and chunky crab cake. Meanwhile, if you’re looking for some surf to go with your turf, the restaurant also offers fresh seafood towers.

But Wooloomool­oo Prime doesn’t rely simply on its quality ingredient­s; the restaurant features a selection of indoor and al fresco seating options across its 10,000 sq ft. venue. Chilean-born architect Hernan Zanghellin­i has given the interiors a fresh redesign that now showcases a blue-and green-tinged lounge and cocktail bar, along with an open-air terrace.

Each of these areas is able to function as a space for corporate events. Half of the venue is set aside for the floor-to-ceiling dining room that greets up to 100 visitors.

If you’re looking for a more laid-back affair with a combinatio­n of seated and standing dining and cocktails, the lounge is able to accommodat­e up to 70 people, while groups of up to 30 can be seated at the high table area right next to the open kitchen. There’s also a 12-seat private dining room if you’d like to keep things more intimate, or head over to the terrace to soak in those phenomenal harbour views.
