There’s a lot written about how to cook this classic Italian dish that involves intense stirring and attention. But in true Australian Doorstep fashion, we’ve adapted it to life on the open road. Follow our homespun version and you’ll see how incredibly simple and tasty it can be.

Ingredient­s:

2 cups white rice 3 cups of water Can of mushroom soup Fresh mushrooms Fresh Parmesan cheese

Directions

Place rice into boiling water. Cook until 80% cooked. Turn down to simmer, until water is almost completely absorbed. Add can of mushroom soup. Stir and simmer for around 5 minutes – try not to overcook the rice. Keep it with just a little bite. Add fresh chopped mushrooms – stir in and let cook through as you take the pan off the heat. Top with freshly grated Parmesan cheese.
