2 bone­less skin­less chicken breasts 1/4 cup peanut but­ter 1 ta­ble­spoon honey 2 ta­ble­spoons soy sauce 1/8 tea­spoon gar­lic pow­der 1 ta­ble­spoon tomato sauce Salt & pep­per, to taste


Cut the chicken into 2cm cubes. Wrap the cubes in a packet of heavy- duty foil, and then freeze. Just be­fore leav­ing for your trip, loosely wrap the frozen packet in a sec­ond layer of foil. The chicken will keep for 24-36 hours (so it can be done be­fore you leave home). When you’re ready to cook, com­bine all in­gre­di­ents in a fry­ing pan set up over a medium camp­fire, break­ing up the frozen chicken as needed. Cook, while stir­ring of­ten, un­til the chicken is cooked through. This takes about 20 min­utes. Serve with rice, cous­cous or quinoa.
