COLEMAN KIDS’ CHICKEN
2 boneless skinless chicken breasts 1/4 cup peanut butter 1 tablespoon honey 2 tablespoons soy sauce 1/8 teaspoon garlic powder 1 tablespoon tomato sauce Salt & pepper, to taste
Cut the chicken into 2cm cubes. Wrap the cubes in a packet of heavy- duty foil, and then freeze. Just before leaving for your trip, loosely wrap the frozen packet in a second layer of foil. The chicken will keep for 24-36 hours (so it can be done before you leave home). When you’re ready to cook, combine all ingredients in a frying pan set up over a medium campfire, breaking up the frozen chicken as needed. Cook, while stirring often, until the chicken is cooked through. This takes about 20 minutes. Serve with rice, couscous or quinoa.
