How to make your own mint sauce

TO MAKE mint sauce, dry the mint leaves first then crum­ble up finely so you can get lots more in the bot­tle. Heat up vine­gar with a tea­spoon of sugar in it and pour this over the crum­bled leaves, al­low to set­tle and top up. Put bot­tle in a pan sur­rounded by enough wa­ter so it won’t float. Bring to the boil then sim­mer for 10 min­utes. Turn off the heat, put on the cap and al­low to cool.
