WEST­ERN Downs Re­gional Coun­cil has opened the 2019 Flavour It Your Way com­pe­ti­tion and res­i­dents are en­cour­aged to sub­mit their ul­ti­mate flavour ideas for pub­lic judg­ing this Aus­tralia Day.

The crowd favourite sausage siz­zle com­pe­ti­tion is re­turn­ing to Chin­chilla for the fourth time and this year will also kick off in Dalby, Miles and Tara.

Res­i­dents are in­vited to sub­mit their sausage flavour ideas to their lo­cal butcher. The most pop­u­lar flavour will be cooked lo­cally and judged by the com­mu­nity on Aus­tralia Day.

Coun­cil­lor Kaye Maguire was look­ing for­ward to tast­ing the en­tries.

“Aus­tralia Day is def­i­nitely a high­light and our re­gion is home to some of the finest lo­cal pro­duce on the Dar­ling Downs, so what bet­ter way to cel­e­brate than with an au­then­tic West­ern Downs sausage siz­zle com­pe­ti­tion with our very own unique flavours,” Cr Maguire said.

Chin­chilla’s Glee­son Qual­ity Meats owner Clin­ton Smith was ex­cited to see what the com­mu­nity came up with.

“Peo­ple are re­ally cre­ative with this com­pe­ti­tion and it keeps me and my team very in­ter­ested - we brain­storm ideas to see what we can do,” Mr Smith said.

Chin­chilla res­i­dents Adele Brewer (pork, white choco­late and sul­tana), Chloe Wright (veg­emite and cheese) and Cody Gre­aly (chicken, cheese and gravy) have won in pre­vi­ous years.
