This yummy caramel treat is not just easy on the eye – as it's gluten-free, it's easy on the bod, too.

APPLE & CARAMEL SCROLLS

PREP + COOK TIME 1 HOUR (+ STANDING) MAKES 10 3 cups (405g) gluten-free plain flour

2/3 cup (100g) buckwheat flour

1 teaspoon xanthan gum (see notes, p 52) ½ teaspoon cream of tartar

½ teaspoon fine sea salt

2 tablespoon­s raw sugar

3 teaspoons (10g) dried yeast

11/3 cups (330ml) milk

160g butter, softened

2 egg yolks

½ cup (150g) dulce de leche, warmed

APPLE FILLING

2 medium Granny Smith apples (300g),

peeled, cored, chopped finely

3/4 cup (165g) raw caster sugar

1/3 cup (40g) almond meal

1/3 cup (75g) coarsely chopped walnuts 2 teaspoons ground cinnamon

1 Preheat oven to 180°C/160° fan. Grease 10 holes of 2 x 6-hole texas (¾-cup/180ml) muffin pans. Line the bases with baking paper.

2 Sift flours, xanthan gum, cream of tartar and salt into a large bowl of an electric mixer fitted with the paddle attachment. Stir in sugar and yeast. In a jug, combine milk, 100g of the softened butter and egg yolks. Add to dry ingredient­s. Mix on low speed until a smooth firm dough forms.

3 Transfer dough to a 40cm long piece of baking paper. Place another piece of baking paper over dough and roll out to a 30cm x 40cm rectangle.

4 Make apple filling.

5 Position the dough with a long side in front of you. Spread the remaining

60g of the softened butter evenly over dough; spoon apple mixture evenly over butter, leaving a 2cm border on the opposite long side. Gently press apple mixture into dough. Starting from the long edge, roll dough up firmly into a 40cm long roll.

6 Using a sharp knife, and without putting too much pressure on the dough, cut dough into 10 x 4cm scrolls. Transfer scrolls, cut-side up, to prepared holes. Cover scrolls with oiled plastic warp. Stand in a warm place for 1 hour until risen by one quarter.

7 Bake scrolls for 30 minutes until golden and cooked through. Leave in pans for 2 minutes before transferri­ng to a wire rack. Serve scrolls drizzled with warm dulce de leche. APPLE FILLING Combine ingredient­s in a bowl.
