Richard Gun­ner’s work is about get­ting fan­tas­tic meat from the farm to our plates. It be­gan when Richard was a young eco­nomics grad­u­ate work­ing on the fam­ily farm, Wan­der­ribby, in the Coorong, on SA’S south-east coast. “We were among the first to trade­mark An­gus with our Coorong An­gus Beef, and pro­duced some­thing unique in that windy, sandy, salty en­vi­ron­ment,” he says. Richard es­tab­lished a rep­u­ta­tion for the qual­ity of his beef, as well as salt­bush-fed Suf­folk lamb and free-range Berk­shire pigs, and in the past 15 years has also built up a chain of butch­ers, Feast! Fine Foods, with stores in Ade­laide and Vic­tor Har­bor, as well as a whole­sale busi­ness that sup­plies top restau­rants, such as Orana and Hent­ley Farm in SA, and Brae in Vic­to­ria. Richard has spent the past seven years rein­tro­duc­ing English Longhorn cat­tle to Australia. “The breed had died out here, but when I learnt that chefs con­sider it the best beef in the world, well…” The project hasn’t been straight­for­ward. “It’s been ex­cep­tion­ally chal­leng­ing,” Richard says. “English Longhorn are a large, slow-grow­ing breed — and they’re not very fer­tile.
