Chef and author Peter Gilmore champions farmers’ markets and specialist greengrocers, as that’s where you’ll find a greater choice of vegetables and different varieties of each. His new book, From the Earth: World’s Great, Rare and Almost Forgotten Vegetables (Hardie Grant, $80), celebrates heirloom varieties, which delight with their names, looks, texture and flavour. It’s wonderful to see the clear link that Peter has established between small-scale producers, such as Hayden Druce and Erika Watson from Epicurean Harvest, and the magical dishes he serves at Quay and Bennelong restaurants in Sydney.
