Chef and author Peter Gil­more cham­pi­ons farm­ers’ mar­kets and spe­cial­ist green­gro­cers, as that’s where you’ll find a greater choice of veg­eta­bles and dif­fer­ent va­ri­eties of each. His new book, From the Earth: World’s Great, Rare and Al­most For­got­ten Veg­eta­bles (Hardie Grant, $80), cel­e­brates heir­loom va­ri­eties, which de­light with their names, looks, tex­ture and flavour. It’s won­der­ful to see the clear link that Peter has es­tab­lished be­tween small-scale pro­duc­ers, such as Hay­den Druce and Erika Wat­son from Epi­curean Har­vest, and the mag­i­cal dishes he serves at Quay and Ben­ne­long restau­rants in Syd­ney.
