and generous in spirit — this is how Julia Busuttil Nishimura describes her style of cooking. Known for creating elegant comfort food in her home kitchen, Julia is an author and cook who spent her formative years in SA’S Mclaren Vale region and Hamilton, Victoria. She now lives in Melbourne with her three-year-old son, Haruki, and husband Nori, who’s a chef. “We’re always discussing new recipes and different flavour combinatio­ns, and spend hours in the kitchen cooking together.” Julia chose potatoes as the hero of this story — “they’re versatile, comforting and, of course, delicious” — and says farmers’ markets and greengroce­rs are the best places to unearth new varieties. “It’s exciting to experiment with different varieties and autumn is when we begin to enjoy their undeniable goodness.” Julia Busuttil Nishimura is the author of Ostro (Pan Macmillan, $45) and is working on her second book.
