IMMUNE BOOSTING SALMON
A tasty serving of salmon that’s packed with nutrients, and complemented by the healthboosting properties of ginger and garlic. (Recipe serves four.)
INGREDIENTS
• 4 salmon fillets • Thumb-size piece of ginger –
shredded • 2 garlic cloves – minced • 3 tbsp soy sauce • 2 tbsp honey or maple syrup • 1 tbsp mirin • Salt and pepper
METHOD
1 Place ginger and garlic into a bowl and mix with the soy sauce, maple syrup and mirin. 2 Whack the salmon fillets in a dish, and season with salt and pepper. Pour on the dressing. 3 Cover with cling film and set aside in the fridge to marinate for 20mins to 2hrs. 4 Heat a pan and add a dash of oil. Add the salmon, skin side down, and press down the marinade. Cook for 2mins, then pour in the reserved marinade and cook for 1min till colour changes. 5 Turn and baste, cooking for 3mins. Serve.
