If you’ve started 2021 with a fresh resolution and renewed vigour to shed some weight, chicken is a good option as it’s not just low in fat but, crucially, it’s also high in protein, which is of course essential to supporting recovery and adaption.

The danger is that you return wearily again and again to the same old recipes, so before poultry ennui sets in, here’s a dish that is so alive with flavour it should keep your love affair with chicken buoyant.

The rich, sweet flavour of mango will not only awaken memories of warm, summer days but it’s also packed with nutrients. Half a mango (approx 160g) boasts the following stats:

• Calories: 99

• Protein: 1.4 grams

• Carbs: 24.7 grams

• Fat: 0.6 grams

• Dietary fibre: 2.6 grams

• Vitamin C: 67% of the Reference Daily Intake (RDI)

Mango is also host to myriad antioxidan­ts, including catechins, anthocyani­ns, quercetin and benzoic acid, which all aid heart health and help prevent certain cancers. Antioxidan­ts are important as they are thought to help protect you against free radicals, which are highly reactive compounds that can bind to and damage your cells. This exotic fruit also aids digestion and, if this isn’t enough to turn your head and convince you to try this recipe, we can confirm that the juicy mango and nutty flavour of wild rice is, frankly, a winning combinatio­n.
