In lieu of missing Easter with the family (as I needed to be overseas for work), I took away the Easter (April 2018) edition of delicious. and read it cover to cover over numerous flights. I soon came up with a long list of recipes to try upon my return. The days I had off after my time away were so enjoyable filled with cooking – the stuffed zucchini flowers (so easy!) and baked cauliflower and chermoula roasted veg salad from ‘Salad Days’ (Entertaining, from p 52), and the Earl Grey poached pears (Jamie Oliver, p 103) proved a successful and tasty vegetarian dinner for friends. I also cooked a belated Easter lunch for my family – creating the plum and cider pot roast duck (Meat Market, p 46) and Jamie Oliver’s pretty orchard tart (p 100) for dessert, much to everyone’s delight (it only required minor tweaking to cater for my gluten-free sister). Thank you to the delicious. team for such an engaging edition that kept me entertained whilst I was away, and for providing such inspiration for a very special Easter lunch – it didn’t even matter that it was a week late!
