1 Sydney’s Pyrmont has a new culinary destination in MISTER PERCY (above), a fashionable wine bar opening at Ovolo 1888 Darling Harbour this month. Hatched by consulting chef Justin North, sommelier Chris Morrison and head chef Luca Guiotto, the boîte will focus on Mediterranean-style pinchos such as burrata and prosciutto, chargrilled octopus, and sardine tart, as well as European drops. Designers Luchetti Krelle embellished the one-time woolstore with Venetian-inspired furnishings in green, red, blue and pink. 2 Brisbane has a hint of Havana in THE MALECÓN (above), a Cuban-themed cocktail bar in Milton with live jazz, unique rums and craft spirits – sourced from around the globe and some created in their own microdistillery. The obscured shopfront (look for the red lamp) opens up to a shadowy interior arrayed with dark leather banquettes, iron balustrades and vintage furniture. Revellers sip on pina coladas, daiquiris and zombies, while food trucks rock up regularly.
3 Feta-loaded fries, eggplant croquettes and prawn saganaki are among the playful dishes at REBEL BLUE (above right), a rebellious take on Greek cuisine in Melbourne’s Windsor. Stuffed tomatoes, meanwhile, are filled with wild rice, pine nuts and yoghurt, and served san choy bau- style in lettuce cups. The dynamic space by Black Milk Design blends a Hellenic colour palette with industrial flourishes inspired by Greek laneways.
