1 Syd­ney’s Pyr­mont has a new culi­nary des­ti­na­tion in MIS­TER PERCY (above), a fash­ion­able wine bar open­ing at Ovolo 1888 Dar­ling Har­bour this month. Hatched by con­sult­ing chef Justin North, som­me­lier Chris Mor­ri­son and head chef Luca Guiotto, the boîte will fo­cus on Mediter­ranean-style pin­chos such as bur­rata and pro­sciutto, char­grilled oc­to­pus, and sar­dine tart, as well as Euro­pean drops. De­sign­ers Luchetti Krelle em­bel­lished the one-time wool­store with Vene­tian-in­spired fur­nish­ings in green, red, blue and pink. 2 Bris­bane has a hint of Ha­vana in THE MALECÓN (above), a Cuban-themed cock­tail bar in Mil­ton with live jazz, unique rums and craft spir­its – sourced from around the globe and some cre­ated in their own mi­crodis­tillery. The ob­scured shopfront (look for the red lamp) opens up to a shad­owy in­te­rior ar­rayed with dark leather ban­quettes, iron balustrades and vin­tage fur­ni­ture. Rev­ellers sip on pina co­ladas, daiquiris and zom­bies, while food trucks rock up reg­u­larly.

3 Feta-loaded fries, egg­plant cro­quettes and prawn saganaki are among the play­ful dishes at REBEL BLUE (above right), a re­bel­lious take on Greek cui­sine in Mel­bourne’s Wind­sor. Stuffed toma­toes, mean­while, are filled with wild rice, pine nuts and yo­ghurt, and served san choy bau- style in let­tuce cups. The dy­namic space by Black Milk De­sign blends a Hel­lenic colour pal­ette with in­dus­trial flour­ishes in­spired by Greek laneways.
