SPECK, HONEY & ASIAGO CROSTINI

160g thinly sliced speck or pancetta 1 ciabatta loaf, halved horizontal­ly 2 tbs extra virgin olive oil 1 garlic clove, crushed 300g coarsely grated asiago cheese (substitute mozzarella) 1/ 3 cup (80ml) runny honey

Heat an oven grill to medium-high heat. Place speck on a baking tray and grill for 5 minutes or until light golden, then set aside. Place ciabatta halves on a clean baking tray and drizzle each half with 1 tbs oil. Spread each half with garlic, sprinkle with freshly ground pepper and grill for 4 minutes or until light golden. Divide asiago and speck slices between ciabatta halves, then drizzle over honey. Grill for 5 minutes or until cheese is melted and speck is lightly caramelise­d. Sprinkle with extra freshly ground black pepper and serve immediatel­y.
