SPECK, HONEY & ASIAGO CROSTINI

160g thinly sliced speck or pancetta 1 cia­batta loaf, halved hor­i­zon­tally 2 tbs ex­tra vir­gin olive oil 1 gar­lic clove, crushed 300g coarsely grated asiago cheese (sub­sti­tute moz­zarella) 1/ 3 cup (80ml) runny honey

Heat an oven grill to medium-high heat. Place speck on a bak­ing tray and grill for 5 min­utes or un­til light golden, then set aside. Place cia­batta halves on a clean bak­ing tray and driz­zle each half with 1 tbs oil. Spread each half with gar­lic, sprin­kle with freshly ground pep­per and grill for 4 min­utes or un­til light golden. Di­vide asiago and speck slices be­tween cia­batta halves, then driz­zle over honey. Grill for 5 min­utes or un­til cheese is melted and speck is lightly caramelised. Sprin­kle with ex­tra freshly ground black pep­per and serve im­me­di­ately.
