1/ 2 cup (60ml) Cocchi Americano Bianco (aperitif – from specialist liquour shops, substitute white vermouth) 2 tbs Hendrick’s Gin

(substitute other gin) 2 tbs red grapefruit juice 1 tbs sugar syrup (see Santa Marta

recipe, opposite) 2 cups (500ml) soda water, chilled Cucumber wedges, to serve

Divide Cocchi Americano Bianco, gin, grapefruit juice and sugar syrup among 4 tall wine glasses. Add soda water and cucumber wedges to serve.
