CHISWICK CHOCOLATE & ORANGE CAKE

Begin this recipe at least 6 hours ahead. You will need a sugar thermomete­r.

5 eggs 260g caster sugar 1 cup (150g) plain flour

1/ 2 cup (50g) cocoa powder 11/ 2 tsp baking powder 45g unsalted butter, melted, cooled

PÂTÉ À BOMBE

90g caster sugar 1 tbs glucose 6 egg yolks

MILK CHOCOLATE MOUSSE

250g good-quality milk chocolate

(we used Valrhona) 30g unsalted butter 280ml thickened cream

DARK CHOCOLATE & ORANGE MOUSSE

200g good-quality dark chocolate,

finely chopped 30g unsalted butter 340ml thickened cream Finely grated zest of 1 orange 1 drop good-quality food-grade organic orange essential oil (optional)
