WHO CAN RESIST a fresh, crunchy salad with a killer dressing? The secret to a great salad, I think, is the dressing. The tangy, sweet, spicy sauce on this salad delivers a huge burst of flavour and is fantastically tasty when poured over the top of this super seasonal meal. It still keeps it simple, though, and works well with the flavour of the green papaya.
The crab in this dish makes it really fresh and interesting, and deep frying it means you get that nice crunch that leaves you wanting more. Crabs are much easier to cook at home than you might think, but you could also make this dish with fish, tofu, calamari or even just have the salad on its own… it’s that good!
