1 The couple behind Bowlsome and Way Back When have opened a Mediterran­ean diner in North Adelaide. The former Paesano site has been given a light and airy fit-out that combines pink and peppermint with relaxed rattan seating. Weekend brunch is the time to come, with tables tossing up between the French toast with pistachio gelato and the poached eggs with beetroot-cured salmon and crispy salmon skin (above). Swing by late for hot sopressa pizzas and limoncello spritzes.

2 Ben Williamson’s long-awaited wood-fire restaurant St Agnes is fired up and ready to go. Housed within a historic brick warehouse in Fortitude Valley, Brisbane, the three-level space consists of a dining room, wine bar and rooftop bar, accessible by New York-style caged lift. Williamson’s menu revolves around the open flame, with whole carcasses broken down onsite then roasted over ironbark, peach and cherry wood.

3 Bondi’s beloved tratt Totti’s (above, right) has launched a second outpost in the Sydney CBD. While the Mediterran­ean-style courtyard didn’t make it across, the Neapolitan ice-cream sandwiches did and that’s all that matters. Mike Eggert is on the tools, flipping out his famous blistered flatbread alongside pink slivers of mortadella and prosciutto. Totti’s will also launch at the Three Weeds in Rozelle later this year, bringing the Totti’s total to three.
