WHAT MAKES A
‘SALTY’ WINE?
A delicious, minerally, salty character that feels refreshing and vibrant in a white wine. It can be oxidisation helping wine along to an almost sherry-like condition, or it can be seaside vineyards where the influence of salty sea spray and proximity to the ocean creates an almost saline character. Saltiness can sometimes be enhanced if you leave the wine on their lees (their dead yeast cells) for a long time and don’t use sulphur until you bottle, or don’t use sulphur at all.
