SERVES 1 (AS A LIGHT MEAL)

1⁄3 cup shred­ded red cab­bage 1/4 red capsicum, cut into

short, thin strips

1 small car­rot, cut into

short sticks

2 tsp Cae­sar salad dress­ing 1 Old El Paso Light Tor­tilla 1 Bega Stringers, halved

2 wedges lemon, to serve

1 Com­bine cab­bage, capsicum, car­rot and salad dress­ing in a small bowl. Toss to com­bine. 2 Place the tor­tilla on a clean board. Ar­range the cab­bage mix­ture in a line across the mid­dle of the tor­tilla. Place cheese on top of cab­bage mix­ture. Roll up tor­tilla. Lay tor­tilla, seam-side down on the board. Cut into pieces. Squeeze lemon wedges over pieces and serve.
