Cau­li­flower rice is a great low-carb al­ter­na­tive to reg­u­lar rice, pasta or pota­toes and is quick and easy to make. Sim­ply trim cau­li­flower and cut into small pieces. Place in a food pro­ces­sor (in batches) and process un­til it re­sem­bles rice or cous­cous. Steamed, mi­crowaved, pan-fried or roasted, it’s de­li­cious. You can then toss in chopped fresh herbs and lemon or cit­rus zest to add an ex­tra flavour kick. If roast­ing, sim­ply driz­zle with a lit­tle olive oil and throw in a few spices as well.

If you are short for time, you can even pick up some pre-pre­pared and ready to go in the fruit and veg­etable sec­tion of the su­per­mar­ket. Cau­li­flower pizza bases are gain­ing pop­u­lar­ity and are a great gluten-free al­ter­na­tive.
