GRILLED PROSCI­UTTO PEACHES

Stuffed with goat’s cheese and honey, these grilled peaches will leave you want­ing more!

PREP TIME: 10 MINS COOK TIME: 10 MINS SERVES 4 (AS A SIDE)

60g goat’s cheese

2 large ripe peaches, halved,

stone re­moved

4 thin slices prosci­utto

4 tsp honey

Chopped mint, to serve

1 Pre­heat a bar­be­cue grill or char­grill pan on medium.

2 Spoon a lit­tle of the goat’s cheese into the mid­dle of each peach half. Wrap 1 slice of prosci­utto around each half, press­ing down lightly.

3 Spray the grill with cook­ing spray. Add the peaches and cook, turn­ing once, for about 6 min­utes, or un­til the prosci­utto is browned and crisp.

4 Driz­zle peaches with honey and sprin­kle with mint to serve.
