GRILLED PROSCIUTTO PEACHES
Stuffed with goat’s cheese and honey, these grilled peaches will leave you wanting more!
PREP TIME: 10 MINS COOK TIME: 10 MINS SERVES 4 (AS A SIDE)
60g goat’s cheese
2 large ripe peaches, halved,
4 thin slices prosciutto
4 tsp honey
Chopped mint, to serve
1 Preheat a barbecue grill or chargrill pan on medium.
2 Spoon a little of the goat’s cheese into the middle of each peach half. Wrap 1 slice of prosciutto around each half, pressing down lightly.
3 Spray the grill with cooking spray. Add the peaches and cook, turning once, for about 6 minutes, or until the prosciutto is browned and crisp.
4 Drizzle peaches with honey and sprinkle with mint to serve.
