CRUNCHY RED CABBAGE SLAW
PREP TIME: 15 MINS SERVES 4 (AS A SIDE)
1/2 small (300g) red cabbage,
finely shredded
2 Tbsp sesame seeds
2 Tbsp pumpkin seeds 1 Tbsp olive oil
1 Tbsp red wine vinegar 2 tsp salt-reduced soy sauce
or gluten-free soy sauce 1 tsp caster sugar
1 Put the red cabbage in a large bowl with the sesame and pumpkin seeds. Toss to combine.
2 Whisk the oil, vinegar, soy sauce and sugar in a small bowl. Add to the salad and toss to combine. Serve immediately.
