Set your exposure before recomposin­g

To get good snow exposures quickly, set your camera to spot metering and dial in +1 or +2 stops of exposure compensati­on. (The brighter the snow, the more correction is required.)

When you point the spot meter at an area of bright snow, press your camera’s exposure lock button and recompose your shot, knowing that the exposure won’t change.
