Winter is the perfect season to show your leftovers some extra love. With curries, tagines and other cosy rice-paired dishes taking centre stage, it’s easy to be left with excess cooked rice in the fridge. I’ve shared a few ideas for using up rice below. It’s a good time to get creative with other leftovers too – pop last night’s pasta into a frittata, roasted vegetables onto a pizza with feta and onions, roast chicken into a Vietnamese chicken noodle soup, or spice up your breakfast by poaching an egg to top that chickpea curry.
