STEP BY STEP
Step 1: Place a large sheet of parchment paper over a medium-sized oven tray and place the chopped vegetables in the centre.
Step 2: Make slits in the lamb and place a garlic clove and rosemary into each pocket.
Step 3: Drizzle the remaining olive oil over the lamb and sprinkle with a generous amount of pepper.
Step 4: Wrap the parchment around the lamb and secure with kitchen string.
