ZEN AND THE ART OF WINE MAINTENANCE

Kiwi chardonnay king Tony Bish has released ZEN, the world’s first chardonnay to be created exclusively in an Ovum. This egg-shaped French oak vessel (made by Taransaud in Cognac) produces rich, creamy, textured wines thanks to the convection currents it produces. A parcel of Mendoza clone chardonnay from the Skeetfield vineyard was whole-bunch pressed straight into the Ovum to ferment wild, then left for 12 months to develop its true personality.
