Tray delicious

Tray bakes are my new favourite fridge clear-out vehicles. They can be loaded with all sorts of odds and ends from your vege drawer or pantry. Here are some of my favourite combos, but feel free to mix and match them depending on what needs using up:

1 SOFT CARROTS, CHICKPEAS, CUMIN AND HONEY

– Take it up a notch with: crispy shallots or a dollop of yoghurt.

2 BEETROOT, BUTTER BEANS, FETA AND KUMARA

– Jazz it up with: crunchy bread chunks and quickpickl­ed red onion.

3 WILTING GREENS AND HERBS, POTATOES, GARLIC AND LEMON

– You can add in haloumi or a fried egg. METHOD:

Preheat oven to fan bake 180oc. Roast ingredient­s with plenty of olive oil, seasoning and 100ml vegetable stock for approx 20-30 minutes or

until all vegetables are cooked.
