Crisp Garlic and Parsley Crumbs (v)

2 tablespoon­s olive oil 1 tablespoon butter 3 cloves garlic, finely chopped 1½ cups fresh breadcrumb­s ⅓ cup chopped parsley sea salt and ground pepper

Heat the oil and butter in a sauté pan. Add the garlic, breadcrumb­s and parsley and stir-fry, stirring constantly, until crisp and golden. Season with salt and pepper.
