Barbecue Beef Brisket with Homemade Wedges, Pickles and Mustard Aioli Dip

A favourite to cook low and slow, this tender beef brisket will melt in your mouth and has a rich, full flavour. Each Silver Fern Farms Beef Brisket pack contains one 500g piece of brisket and a spice rub.

1 pack Silver Fern Farms Beef Brisket with Spice Rub

olive oil

3 tablespoon­s Worcesters­hire sauce

1 tablespoon maple syrup

100g smoky barbecue sauce TO SERVE homemade potato wedges, pickles, slaw and mustard aioli for dipping

EQUIPMENT: Cut a piece of tin foil big enough to wrap around the brisket and line with baking paper.

Preheat the oven to 140°C (130°C fan bake).

Rub the Silver Fern Farms Beef Brisket Spice Mix all over the Silver Fern Farms Beef Brisket. Heat a drizzle of oil in a frying pan over medium-high and lightly sear on all sides. Place on the lined foil, brush with the Worcesters­hire sauce and maple syrup, then add a splash of water. Wrap the brisket to seal tightly. Place on an oven tray and bake for 5-6 hours, or until the brisket is tender.

Remove from the oven and unwrap the foil. Brush the brisket with the smoky barbecue sauce, then place back in the oven uncovered to allow the sauce to form a crust. The sauce will burn quickly, so only leave for a few minutes. Apply more sauce if necessary and repeat. Remove from the oven and let the brisket rest for 10 minutes. Pull the brisket apart with two forks or slice into strips.

TO SERVE: Serve the brisket with wedges, pickles, slaw and aioli. SERVES 4
