Don’t be afraid to cook your lettuce
Though chomping down on fresh leaves is more common, cooking lettuce can be delicious, and
a handy way to use it up if it’s not super fresh.
• Halve and barbecue or pan-char cos and serve with salsa verde or tartare sauce for a great summer side dish.
• Stir-fry thinly sliced lettuce or salad greens in a hot pan with oil and garlic for a lovely accompaniment for rice dishes and curries.
• Add a handful of frozen or fresh salad leaves to your favourite soup combinations – I like potato and kale, pea and mint or lentils with lemony greens.
