Oven-dried Tomatoes with Rosemary (gf) (v)

500 grams cherry tomatoes

2 sprigs rosemary ¼ cup white wine vinegar or rice wine vinegar

extra virgin olive oil to top up jar

Preheat the oven to 100°C.

EQUIPMENT: Grease and line a baking tray with baking paper.

Place the whole cherry tomatoes on the baking tray. Place in the oven for 50-60 minutes until soft and slightly shrivelled. Remove and set side to cool. Place in a small sterilised glass jar with the rosemary then cover with vinegar and extra virgin olive oil. Seal the jar and refrigerat­e.
