WHERE’S THE MEAT?

Cook 120 grams bacon or pancetta in the oil before adding the garlic. Shredded cooked chicken can be reheated in the sauce for the last 15 minutes of cooking.

WORK IT YOUR WAY

Flake in 1-2 tins of tuna along with some capers and black olives for a pasta sauce.

For shakshuka, spice up the sauce with harissa and toasted cumin seeds. Fold in wilted spinach then crack eggs over the top. Bake at 180°C until just set. Top with sliced avocado and coriander to serve.

Roll some pork and fennel sausages into meatballs. Brown off in a pan, add tomato sauce and oregano then bake at 180°C until cooked. Top with shredded mozzarella and grill until molten and golden.
