Pineapple and Honey Mustard Barbecue Sauce (gf)

Another great condiment to have in your repertoire! It’s also delicious with burgers, steak and lamb or use it as a dip for fries or crispy potato skins.

1 tablespoon vegetable oil

1 small onion, grated

pinch sea salt

½ medium ripe fresh pineapple, peeled, cored and diced

½ yellow cup mild mustard American

2 cloves garlic, crushed

1 teaspoon Worcesters­hire sauce

1½ teaspoons dry English mustard

1 tablespoon tomato paste

2 tablespoon­s runny honey or brown sugar

¼ teaspoon cayenne pepper 2 tablespoon­s cider vinegar ¼ cup water 1 teaspoon sea salt 1 tablespoon grain mustard

Heat the oil in a medium saucepan and add the onion, salt and pineapple. Cover and cook gently, stirring occasional­ly, for 10 minutes.

Add all the remaining ingredient­s except the grain mustard and bring to the boil then reduce the heat to low. Cook, partially covered with the lid, for 10 minutes, stirring often to prevent it catching on the base of the pan. Cool.

Using a stick blender or a food processor, blend until smooth. Tip into a bowl and stir in the grain mustard. MAKES ABOUT 1½ CUPS
