Crispy Gremolata Crumbs (v)
2 tablespoons olive oil 1 tablespoon butter 3 cloves garlic, finely chopped finely grated zest 1 lemon 1½ cups fresh sourdough breadcrumbs
⅓ cup chopped parsley sea salt and ground pepper
Heat the oil and butter in a sauté pan. Add all the ingredients and cook, stirring constantly, until crisp and golden. Season with salt and pepper. MAKES ABOUT 1½ CUPS
