Crispy Gremolata Crumbs (v)

2 tablespoon­s olive oil 1 tablespoon butter 3 cloves garlic, finely chopped finely grated zest 1 lemon 1½ cups fresh sourdough breadcrumb­s

⅓ cup chopped parsley sea salt and ground pepper

Heat the oil and butter in a sauté pan. Add all the ingredient­s and cook, stirring constantly, until crisp and golden. Season with salt and pepper. MAKES ABOUT 1½ CUPS
