Orange, Currant and Pomegranat­e Dressing (gf) (v)

2 tablespoon­s each olive oil and pomegranat­e molasses

1 tablespoon orange juice

1 clove garlic, crushed

sea salt and ground pepper

¼ cup currants

Whisk the oil, molasses, orange juice and garlic together and season with salt and pepper. Stir in the currants. MAKES ABOUT ½ CUP
