Maddie has always wanted to write about food but has spent a lot of time doing other things, including studying poetry, teaching German, working as a librarian and reporting on London’s recycling infrastruc­ture. Now, she’s landed a dream job in food media and will probably never do anything except edit and eat noodles again. If she’s not baking a cake or listening to any and every podcast featuring Samin Nosrat, she’s probably sewing a new piece of clothing, one of her favourite hobbies. She doesn’t like talking about herself, which is why this is in the third person.

Much like the best recipes, Josh is endlessly versatile. Originally trained in graphic design, he has skilfully turned his lens on everything from coconut farmers to beekeepers and swanky urban interiors, but food is definitely a favourite subject. “It’s a great mix of technical photograph­y (figuring out how to portray a dish in the best possible way) as well as a subject matter I’m really interested in. Being able to work with Sarah and Claire to craft a unique environmen­t for each of the shoots is pretty neat. From a late-afternoon Italian courtyard to a bright American-style diner, over the years we’ve pretty much done it all.” Then of course there are rewards of the edible kind. “Shooting for dish does always mean that lunch on shoot days is pretty phenomenal too!”

Yuki has been photograph­ing food since the very start of his career in Japan, nearly 20 years ago. He was naturally inspired by being surrounded by amazing food where he grew up on the northern island of Hokkaido – famous for its great seafood and ramen noodles. One of his favourite parts of the job is tasting the food at the end of the shoot. A big reader and avid fan of Japanese writer Haurki Murakami, he also enjoys watching NBA basketball and is looking forward to seeing what the Philadelph­ia 76ers can achieve this season!
