HUEVOS CON PATATAS
Roll out huevos con patatas for an inexpensive summer meal. Sizzle parboiled cubed potatoes in butter until golden, spoon onto warmed soft flour tortillas, top with sizzled red capsicum and sweet corn kernels, a fresh salsa of red onion, tomato, red chilli and coriander, and dollops of your fave chilli sauce. Finish with avocado and lime, fried eggs and sizzled chorizo… Olé!
