HUEVOS CON PATATAS

Roll out huevos con patatas for an inexpensiv­e summer meal. Sizzle parboiled cubed potatoes in butter until golden, spoon onto warmed soft flour tortillas, top with sizzled red capsicum and sweet corn kernels, a fresh salsa of red onion, tomato, red chilli and coriander, and dollops of your fave chilli sauce. Finish with avocado and lime, fried eggs and sizzled chorizo… Olé!
