Gibson Martini

The Gibson martini, traditiona­lly made with gin (although you can substitute for vodka), uses a pickled cocktail onion in place of the usual olive to add an umami undertone to the classic cocktail.

70ml gin 15ml dry vermouth

1-2 cocktail onions, strained

Chill a martini glass in the fridge. Put the gin and vermouth into a cocktail shaker with plenty of ice and stir. Strain into the chilled cocktail glass and garnish with one or two cocktail onions. SERVES 1
