LETTUCE HEARTS, AVOCADO AND CUCUMBER SALAD

The dressing is great served with tacos, kebabs and grilled fish.

2 firm iceberg lettuces, outer leaves trimmed, then cut into wedges

½ telegraph cucumber, halved, seeds scraped out, cut into batons

1-2 avocados, cut into wedges

soft herbs (use chervil, dill, basil, mint or parsley) AVOCADO DRESSING ½ cup sour cream

1 ripe avocado 1/3 packed cup fresh basil leaves 2 cloves garlic, crushed ½ teaspoon ground cumin

2 tablespoon­s each olive oil and lemon juice

3 tablespoon­s water sea salt, to taste

DRESSING: Blend the ingredient­s in a food processor until smooth.

Arrange the lettuce, cucumber and avocado in a bowl. Dollop over some of the dressing and top with the herbs. Serve the remaining dressing separately. SERVES 6-8
