goji, cran­berry and brazil nut bars

¾ cup (105g) goji berries

1½ cups (225g) raisins

½ cup (65g) dried cran­ber­ries (craisins)

¼ cup (25g) LSA

¼ cup (25g) pea pro­tein pow­der+

2 tea­spoons vanilla ex­tract

2 ta­ble­spoons white chia seeds

½ cup (7.5g) puffed rice

1 cup (160g) brazil nuts, chopped

Place the goji berries, raisins, cran­ber­ries, LSA, pro­tein pow­der and vanilla in a food pro­ces­sor and process for 2 min­utes or un­til the mix­ture comes to­gether. Trans­fer to a large bowl, add the chia seeds, puffed rice and brazil nuts and mix well to com­bine (the mix­ture will be quite firm). Press the mix­ture into a lightly greased 20cm square tin lined with non-stick bak­ing pa­per. Re­frig­er­ate for 1 hour or un­til firm. Cut into bars to serve.
