goji, cranberry and brazil nut bars
¾ cup (105g) goji berries
1½ cups (225g) raisins
½ cup (65g) dried cranberries (craisins)
¼ cup (25g) LSA
¼ cup (25g) pea protein powder+
2 teaspoons vanilla extract
2 tablespoons white chia seeds
½ cup (7.5g) puffed rice
1 cup (160g) brazil nuts, chopped
Place the goji berries, raisins, cranberries, LSA, protein powder and vanilla in a food processor and process for 2 minutes or until the mixture comes together. Transfer to a large bowl, add the chia seeds, puffed rice and brazil nuts and mix well to combine (the mixture will be quite firm). Press the mixture into a lightly greased 20cm square tin lined with non-stick baking paper. Refrigerate for 1 hour or until firm. Cut into bars to serve.
