Goji trail mix protein bars
¾ cup (120g) almonds
½ cup (100g) pepitas (pumpkin seeds), plus extra for sprinkling ½ cup (75g) sunflower seeds, plus extra for sprinkling
14 fresh dates (280g), pitted
¼ cup (80g) almond spread
1 teaspoon vanilla bean paste
¼ cup (25g) unflavoured protein powder+
½ cup (70g) goji berries, plus extra for sprinkling Line a lightly greased 20cm square tin with non-stick baking paper. Place the almonds, pepitas, sunflower seeds, dates almond spread, vanilla and protein powder in a food processor and process for 2–3 minutes or until the mixture comes together. Add the goji berries and pulse until well combined.
Press the mixture into the tin and sprinkle generously with the extra pepitas, sunflower seeds and goji berries. Refrigerate for 40 minutes or until firm. Cut into 16 squares and serve. MAKES 16. + Look for pea or whey protein powder in health food stores and the health food section of supermarkets.
Tip: You can store these bars in the refrigerator for up to 2 weeks.
