Greens with Smoked Almonds and Red Peppers

Ingredient­s

500g fresh green beans

2 bunches broccolini

2 bunches asparagus, ends trimmed

1 tablespoon mustard (Dijon or grain)

Juice of 1/2 a lemon

100g smoked almonds slightly crushed

2 tablespoon­s olive oil

2 roasted red peppers peeled and chopped homemade or jarred varieties work great too.

Method

1. Cook the greens in boiling water or steam until almost done. Dip in cold water for 5-10 seconds to halt the cooking.

2. Toss with lemon, mustard & olive oil and place on a platter. Scatter with almonds and red pepper pieces.

*I often added roasted eggplant cubes too for something different.
