Sarah Glover’s Chewy Coconut Choccie Cookies

Ingredients (20 Cookies)
2 eggs
90g sugar
200g coconut desiccated
75g butter melted, cooled to room temp 100g chocolate chopped
Good pinch salt
Method
1. Set a grill to 190C.
2. Line a baking tray with parchment paper. 3. In a bowl add the eggs and sugar and whisk till mixed, add the coconut flakes, salt, chocolate and butter and mix until fluffy. Let the batter sit for 20 mins, so that the coconut can absorb for a little bit. 4. Spoon dollops of cookie dough onto the tray and shape into a pyramid, place in the grill and cook for 10-15 mins until golden on top, sprinkle with sea salt.
