Here are his favourite snacks to serve guests: QUICK: Roll sliced leg ham, Mon­terey Jack cheese and Di­jon mus­tard into a good puff pas­try so it forms a cylin­der, brush with egg and cracked pep­per and bake. It’s like a sausage roll, but bet­ter. QUICKER: Make toasties with qual­ity leg ham or cured meats, an­tipasti and cheeses, with hot sauces and mus­tards as sides. QUICK­EST: You can’t go wrong with char­cu­terie, an­chovies and bread and but­ter. Buy the best you can af­ford.
