coffee & cardamom overnight oats
1/2 cup rolled oats
1 tbsp ground almonds
1/4 tsp salt
1-2 tsp brown sugar
1/4 tsp ground cardamom
3 tbsp very strong freshly brewed coffee
1/2 cup milk (non-dairy milks such as almond, cashew or soy work well)
1/2 cup Greek yoghurt
1 small banana, diced
HOW TO
The night before, put the oats, almonds, salt, brown sugar and cardamom in a bowl. Stir in the coffee and milk, then cover and leave in the fridge. The next morning, fold through the yoghurt and banana. Taste – and add a little more sugar, if you like – then divide between two small bowls and serve immediately. Serves 2.
