What’s your favourite way to eat an egg? Are you imagining it in your head? Good, because the mental image you’ve conjured is completely incorrect. You should, in fact, have been thinking of devilled eggs. “But Fraser, what the hell has mustard powder got to do with devilled eggs?” you ask. Stupid question – it’s one of the key ingredient­s. It’s also used to make that goopy yellow pickle spread your grandma bought and forced you to eat on a scorching Gold Coast beach as a kid, despite the fact it was too windy to prepare food and there was now sand and grit through everything. Maybe that was specific to my childhood, though, who can be sure. Either way, Keen’s mustard powder is a classic – a staple of spice racks everywhere. Often for years at a time, just sitting there. It’s not even being used for cooking anymore, it’s just become a comforting permanent fixture in your pantry, and isn’t that all you can ask for from a condiment?
