Mint patty delights

INGREDIENT­S 1/2 can sweetened condensed milk 1/2 tbsp mint extract green food colouring 4 cups icing sugar

100g dark couverture chocolate (or any good-quality cooking chocolate)

HOW TO

Line one tray with greaseproo­f paper and prepare a workbench with a dusting of icing sugar.

Take a large bowl and pour in the condensed milk, mint extract and food colouring. Mix until combined.

Add icing sugar and beat with an electric mixer on low speed until the mixture becomes smooth. Pour it onto your sugary workbench.

Knead the mixture gently until you’ve got a nice, smooth ball. Pull pieces off and shape them into balls. Then, flatten each ball into a disc on the tray. Pop in the fridge and let them set for 1 1/2 hours.

Meanwhile, boil some water in a saucepan and fit it with a heatproof bowl (making sure the water doesn’t touch the bowl). Turn the hotplate down low and melt the chocolate in the bowl.

Brush one side of the patty with melted chocolate and transfer it to a tray lined with greaseproo­f paper. Set in fridge.

Once it’s ready, store in an airtight container in the fridge.

Makes approximat­ely 24 patties.
