The baked potato is the humblest meal you can possibly eat. It’s a stoic display of humility and sturdiness, but it also teaches you an important lesson about collaborat­ion. On its own, the baked potato isn’t much. But once you start to add a few more elements – some scallion and sour cream, maybe a little smoked paprika along with salt and pepper

– it starts to truly sing. It’s a vehicle for other things, a bus of flavour if you will, that if prepared correctly (on a fire, shoddily wrapped in alfoil) will end up being the star of the show. The baked potato is reliable like a best friend, coming through for you when you’re drunk or at your lowest. But it’s also ready to celebrate with you in moments of triumph when crowds applaud as you take the final mouthful, like Bruce Bogtrotter polishing off a cake in front of the whole school.
