Mushrooms magic to restore evening zest

LACK of inspiratio­n, motivation and time can be some of the biggest barriers for busy Aussie families when it comes to the daily task of feeding a family.

New research from Australian Mushrooms has found almost two thirds of Australian mothers lack the time or are fed up with meal preparatio­n.

They also complained of having to cook multiple meals each night to satisfy a range of family preference­s.

Celebrity chef Miguel Maestre has teamed with Australian Mushrooms to help mums find the joy in meal times, with a series of chef secrets for making meals much healthier and much tastier.

“We all want to be better cooks and create meals like those we see on TV or in our social media feeds but that’s not the reality for most Australian parents,” Maestre said.

“At the end of the day, after working, picking the kids up from school or soccer practice, and doing the shopping, Passionfru­it and lychee dominate the nose with hints of blossom and pear. Balanced, upfront acidity amplifies the fruit intensity with a seamless transition into a soft, rounded mid-palate. The finish is dominated by flavours in the citrus spectrum. Made from 100 per cent pinot noir, this wine shows varietal characters on the nose with strawberry fruits and an earthiness of spice and summer straw dominating. This wine is to be enjoyed with food or simply slightly chilled on a sunny day. often the last thing you feel like is spending hours in the kitchen, trying to cook dishes that the whole family will eat.

“We get stuck making the same old dishes on rotation but it doesn’t have to be this way.

“Mushrooms are incredibly versatile and not only are they that secret ingredient that makes dishes taste better, they also add a heap of nutrients into each dish.”
